Happy 4th of July

I love the 4th of July! It doesn’t get more all American then friends gathering around the barbeque for a day of fun in the sun followed by a night of beautiful lit skies. I have so many childhood memories of block parties and sparklers and going be bed late exhausted from the fun days activities.

Even as an adult, I’m usually dressed from head to toe in my red, white and blue. I blast the cheesiest all American music from my rooftop as we watch the fireworks.

To add to the fun and festivities, I’m sharing 5 fun recipes that will be sure to add a little all American fun to your festivities! Enjoy!

Patriotic Pudding (great for brunch)

  1. Place ¼ cup chia seeds in to 1 cup of almond or coconut milk and wisk or shake to break up the clumps. Let sit over night for a few hours until the chia seeds swell.
  2. Mash 1 cup of fresh strawberries and or raspberries together
  3. Layer in a cute jar (you can get them at all craft stores) and top with fresh blueberries. (my son loves it with a blob of fresh whip cream on top!)

Fit 4th Red, White and Blue Salad


2 cups watermelon, cubed
1 cup jicama, peeled and cubed
1 cup blueberries
2 tablespoons lime juice
2 tablespoons honey
pinch of chili powder
½ teaspoon salt
¼ cup fresh mint, chopped
¼ cup feta cheese, crumbled

Easy 4th of July Party Platter

It doesn’t get easier then this and it’s so fun to bring to a bbq! I like to use raspberries and mini marshmallows, but Strawberries and bananas work too!

Red, White, and Blue Margaritas


Strawberry layer
2 cups (12 ounces) frozen strawberries
1/2 cup tequila
1/4 cup fresh lime juice
1/4 cup agave nectar (or honey)
extra ice, if needed
Blueberry layer
1 cup (12 ounces) frozen blueberries
1/2 cup tequila
1/4 cup fresh lime juice
1/4 cup agave nectar (or honey)
extra ice, if needed

Coconut layer

1/2 cup coconut milk (I recommend full-fat)
1/2 cup silver tequila
1/4 cup fresh lime juice
1/4 cup agave nectar (or honey)
extra ice, if needed

Blend each layer and be sure to keep each layer in the freeze while you make make he others. You’ll want them to get good and thick before layering them!

Homemade Dairy Free watermelon Ice Cream (no ice cream machine needed)


1 can full fat coconut milk
5 pitted medjool dates
⅛ teaspoon scraped vanilla bean or ⅛ teaspoon vanilla extract
1½ cups cubed watermelon


  • Blend all ingredients in a blender and transfer to a brownie or cake pan.
  • Place in the freezer for 3 hours or until hardened.
  • Break frozen watermelon mixture into chunks and place back in the blender.
  • Blend until a creamy consistency is reached.
  • Place back in a container or large bowl and place in the freezer to firm up for about 30 minutes.
