I’ve had several requests for suggestions to help cure your sweet tooth and ways to get more protein in your meal plans! So here you have it, we are going to kill 2 birds with one stone! I’ve got a bunch of recipes for these little mug cakes, to be honest I can’t remember which one is which, I tend to make them up as I go these days! However, this is the basics of what I do. The banana or apple sauce makes this one really moist. The key is finding a protein you like. I find that the caseins work a bit better in the mug cakes, but whey works too.
Chocolate Protein Mug Cake
1.5 tbsp Coconut flour
2 tsp cacao
1 tbsp Chocolate Whey or casein Protein powder
1 tbsp almond flour
1 tbsp greek yogurt
3 tbsp mashed banana or apple sauce
1 tbsp granulated sweetener (I use Trulicious, you have to get it online, www.truilicioussweetener.com or www.amazon.com
2-3 tbsp almond milk
1 egg white
Mix ingredients and pour in a greased mug/bowl cook in micro from 1/1.5 mins. Put on a plate and top with a little nut butter, jam, berries, maple syrup, honey or greek yogurt. It needs a little something on top, my favorite is PB2 mixed with a little almond milk.
I like the mix of coconut flour and almond flour, but you can you 2-2.5 tbsp of coconut if that’s all you have. You can also blend up oatmeal in the blender to make a fine oat flour, that works as well, but coconut flour is the best for mug cakes!
I highly recommend you get truilicious too. It tastes way better then anything out there!
